English-speaking countries意为“说英语的国家”。Englishspeaking是复合形容词，修饰countries。
eg：Switzerland is not an Englishspeaking country.

all over the world意为“全世界”。all over意为“遍及……”，相当于around。
eg：Radio Beijing sends the news all over the world.
